Juicy Jumbo Corn Succotash

No buns? No problem. Enjoy your favourite Schneiders Juicy Jumbos in this fresh and zesty flavour fiesta, perfect for a family-style feast.


4 Ears corn, shucked

4 Schneiders Juicy Jumbos Original

1 Avocado, diced

1/2 cup (125 mL) PC Pico de Gallo Mild Salsa

1/2 cup (125 mL) Cilantro, chopped

1/2 cup (125 mL) PC Feta Cheese in Brine, crumbled

1 Jalapeño, seeded and thinly sliced








Preheat the barbecue to medium-high heat.

Place the corn on the grill, rotating often, until charred on all sides, about 6 minutes.

Place Juicy Jumbos on grill until dark brown on all sides and heated through, about 6 minutes, rotating often. Remove from grill and tent with aluminum foil to keep warm.

Cut corn from cob. Mix with avocado, pico de gallo and cilantro.

Transfer corn mixture to a serving platter, top with Juicy Jumbos. Garnish with feta and sliced jalapeños.
