5 Spice Savoury Bacon Shrimp Salad



5 Spice Savoury Bacon Shrimp Salad

Talk about a better salad! Crispy bacon, sauteed shrimp and all the right spices make this dish a lunch or dinner winner. 


12 tiger shrimp, peeled, halved lengthwise 

1 tsp Chinese five-spice

1 tsp vegetable oil

1 tsp garlic, finely grated

5 slices Schneiders® Classic Cut Bacon, cut into ½” pieces

4 cups napa cabbage, finely sliced

1 avocado, diced

½ cup of bean sprouts

1/3 cup coriander, roughly chopped

1/3 cup mint, roughly chopped

1/3 cup Thai basil, roughly chopped

2 scallions, thinly sliced 

¼ cup crispy onions

1 shallot, finely diced

3 Tbsp bacon fat

3 Tbsp olive oil

2 Tbsp sherry vinegar 

2 Tbsp low sodium soy sauce

1 clove garlic, finely grated

1 tsp Dijon mustard

In a small bowl add shrimp, five-spice, garlic and oil, let sit for 5-10 mins. 

In a medium frypan on medium low heat, add bacon and cook, stirring frequently, until lightly golden.  Remove bacon from pan and onto paper towel.

Keeping 3 Tbsp of bacon fat in the pan, add olive oil and shallot and cook until translucent (approx. 5 minutes).  Remove pan from heat and stir in garlic.

Whisk in Dijon, then add soy sauce and sherry vinegar and stir to combine. Put aside.

Combine cabbage, herbs, bean sprouts and avocado in a large bowl. Toss with vinaigrette and spoon onto a platter.

In a frypan on medium high heat add 1 tsp of olive oil and the shrimp. Fry until shrimp are just cooked (approx. 3 mins).  Remove pan from heat and stir in bacon.

Finish by spooning the bacon and shrimp over top of the salad and sprinkling with crispy onions.
