Asparagus Salad with Grilled Bacon Vinaigrette
If bacon makes everything better, our Butcher Cut Double Smoked Bacon makes everything incredible. We crafted this recipe with ingredients specifically chosen to complement our thick, richly flavourful bacon. The exciting blend of smoke, tang, and spice in this salad makes leftovers highly unlikely.
½ cup Arugula
½ cup Radicchio, finely sliced
1 Egg, hard-boiled, chopped
2 tbsp Crispy shallots
1 tsp Chives, finely sliced
2 pcs Schneiders® Butcher Cut Double Smoked Bacon, grilled until crisp
1 Shallot, finely sliced
3 tbsp Olive oil
1 tsp Dijon mustard
1 tbsp Sherry vinaigrette
Salt and pepper
Lightly oil and season asparagus and grill for 1 to 2 minutes until barely tender, reserve.
Grill the bacon until visually grilled and slightly crisp. Once cool, roughly chop and reserve.
Heat a small pan on medium heat and add the oil and shallots and cook until shallots are soft, but have not coloured; about 5 minutes.
Stir in sherry vinegar, Dijon mustard and bacon. Season with salt and pepper. Lay out grilled asparagus on a platter.
Spoon over chopped egg, then add arugula and radicchio.
Spoon the vinaigrette over everything and top with crispy shallots and fresh chives.
