Avocado Brunch Baguettes
We’ve elevated your everyday avocado toast into something special. Our hardwood smoked sausage lends its savoury taste and satisfying texture to the lightly seasoned avocado. It’s all beautifully presented on artisanal bread for a simply scrumptious recipe that brings bistro-quality flavour into your home.
1 or 2 Sourdough demi-baguettes (sliced lengthwise, but not all the way through)
1 tsp Olive oil
1 clove Garlic
1 Avocado, skin and pit removed
⅛ tsp Flaky sea salt
Chili flakes (optional)
2 Eggs (optional)
Cut the top off the garlic clove and gently rub the cut sides of the sourdough baguettes with it. Drizzle with olive oil.
In a small bowl, gently mash the avocado with the back of a fork and season with salt.
Fry or grill the sausages per package instructions then slice into 5 or 6 pieces on a bias.
Spread the avocado evenly on both sides of the baguette. Sprinkle with chilli flakes (optional).
Arrange sliced sausage over the avocado.
Tips:
Any baguette can be used if sourdough baguette cannot be found. Alternatively, cutting a regular sourdough baguette to the desired length can be used for this recipe. Try adding a fried or poached egg to this brunch treat.
