Bacon, Leek, and Gruyere Quiche

These mini quiches feature our intensely smoky bacon and the rich taste of gruyere cheese. Sweet, acidic leeks add balance to the savoury flavours, making each bite perfectly balanced. This simple yet satisfying recipe makes a delicious addition to your breakfast, brunch or holiday menu.


1 egg

½ cup 35% cream

¼ cup gruyere cheese, shredded

½ teaspoon kosher salt

Pepper, to taste

Pinch of nutmeg

3 slices Schneiders® Butcher Cut Double Smoked Bacon, diced

¾ cup leek, thinly sliced

1 clove roasted garlic, pureed

1 teaspoon Italian parsley, finely chopped

18-22 mini tart shells, precooked per package instructions

Fresh chives (optional)

Preheat oven to 350 F.

In a small bowl whisk the cream, egg, gruyere cheese, egg, parsley, salt, pepper and a pinch of nutmeg together.  Reserve.

In a small pan on medium heat, cook the bacon until golden; approx. 5 minutes. 

Remove bacon from the pan and drain on a piece of paper towel.

Pour off all but 1 tablespoon of bacon fat. Add leeks and cook until tender.

Add the bacon back into the pan and mix together.

Add a heaping teaspoon of filling into each tart shell.

Carefully pour the egg/cream mixture into each tart shell to just below the top of the pastry.

Bake the quiche on a sheet pan for 10 to 12 minutes until just set.

Let cool for 5 minutes before serving.

Finish with freshly cut chives (optional).
