Bacon Wedge Salad


8 slices Schneiders® Butcher Cut Country Maple® Bacon, cut 1/2 inch thick

1 head Iceberg lettuce, cut into 8 wedges

1 Avocado, cut into ¼ inch pieces

20 Cherry tomatoes, halved

¼ cup Fried onions

½ cup Smoked gouda cheese, grated

¼ cup Dill, picked

⅓ cup Ranch buttermilk dressing

2 tbsp (30 mL) Lemon juice

Fry bacon in a skillet.

Arrange wedges of lettuce on a platter. Scatter avocado and cherry tomatoes over the lettuce. Drizzle with lemon juice.

Arrange the bacon pieces amongst lettuce wedges and in the center of the platter, dress with salad dressing, and top with cheese, onions and dill.

Try using smoked cheddar for a bit more bite. This will also work well with blue cheese, or thousand island dressings.
