12 slices Schneiders® Classic Cut Bacon

4 slices Schneiders Deli Best® Hardwood Smoked Olde Fashioned™ Ham

2 Maple Leaf Prime® Raised without Antibiotics Chicken Breasts, sliced in half lengthwise

2 tbsp Basil pesto

1 tbsp (15 mL) Canola oil

Preheat oven to 425ºF (220ºC).

Brush Maple Leaf Prime® Raised without Antibiotics Chicken Breasts with pesto, reserve.

Lay 2 pieces of plastic wrap out on the counter overlapping each other by 1/3.

Place 5 pieces of Schneiders® bacon vertically, overlapping slightly, in the middle of the plastic wrap. Lay one piece of bacon that it extends evenly off both sides.

Lay Schneiders Deli Best® Hardwood Smoked Olde Fashioned™ ham, overlapping by half.

Place one piece of chicken thick end facing out on top of the ham. Reverse the other piece and lay beside the other so that thick ends face out.

Fold in the sides of ham and bacon over the ends of chicken. Starting from the bottom, roll bacon over the chicken and wrap as tight as possible in plastic wrap, Repeat the steps above to make the 2nd roll. Place in fridge for 20 minutes to firm up.

Preheat a non-stick pan on medium heat. Unwrap the rolls and place in the pan with oil, bacon seem down.

Place pan in the oven and roast the rolls, turning every 5 minutes or so until cooked and bacon is golden, approx. 20 minutes.

Let rest for 10 minutes before slicing.

Notes:
This can be rolled in advance and kept in the fridge for up to 2 days before cooking. The key is to wrap the roll as tight as possible, so you achieve an even cylinder shape.
Serve with your favourite salad.
