Bacon Wrapped Scallops
12 slices Schneiders® Hickory Smoked Classic Cut Bacon
12 Large fresh scallops, patted dry
DRY RUB:
2 tbsp Paprika
1 tsp Salt
2 tsp Onion powder
2 tsp Garlic powder
2 tsp Black pepper
2 tsp Thyme
2 tsp Oregano
½ tsp Cayenne pepper
Mix together all the spice rub ingredients and set aside.
Lay bacon slices on a parchment-lined baking sheet and cook in preheated oven for about 10 minutes or until just beginning to brown. Remove from oven to cool slightly.
Wrap each scallop in a slice of bacon and secure with a toothpick. Place on a parchment lined baking sheet and sprinkle both sides liberally with spice rub.
Bake in preheated oven for 8-10 minutes or until the bacon is crisp and the scallops are firm and opaque.
