Black Forest Ham & Gruyere Crepes

Crepe Batter

1 cup flour

1 Tablespoon sugar

¼ teaspoon salt

3 eggs

2 Tablespoons unsalted butter, melted, plus more for cooking the crepes

1 cup whole milk

1 cup caramelized onions

1 cup Gruyere cheese, grated

¼ cup chives, thinly sliced

16 slices Schneiders Smoked Black Forest Ham

In a small bowl add the eggs, milk and melted butter and whisk thoroughly to combine.

In medium size bowl add the flour, sugar and salt.  

Add the wet ingredients into the dry and whisk until smooth, about 1 minute.  Cover the bowl with plastic wrap and let sit for at least 30 minutes before making the crepes.

Brush a 10” non-stick pan with butter and place it on medium low heat.  Once the pan is hot, add approx. 2 ounces of batter to the pan and swirl around to cover the entire pan with batter.

Cook for about 1 minute until lightly in colour.  

Flip with a spatula and cook for a minute on the other side.  Continue to cook the remaining batter until all is used up.

To assemble the crepes spread a spoonful of caramelized onions on the top half of a crepe.  Add a thin layer of cheese on top of the onions then lay 2 slices of ham over the cheese.  Sprinkle with chives then fold the bottom half of the crepe over the ham, and then in half again.  Repeat with remaining crepes.

Brush the pan with a little more butter and return the pan to the stove on medium heat.  Cook the crepes, turning once, until the cheese begins to melt, approx. 1 to 2 minutes.

Top with a few more chives and serve immediately.
