Bologna Sandwich with Dill Pickle Sauce

Take a lunchtime classic up a notch by giving our lovingly crafted bologna the star treatment it deserves. The zesty, tangy dill pickle sauce will keep you coming back, bite after bite, until every delicious morsel disappears.

350g Schneiders Blue Ribbon Classic Bologna
 
4 Fresh Kaiser buns
 
8 leaves bibb lettuce, torn
 
4 slices smoked cheddar cheese
 
1 T vegetable oil
 
 
Dill pickle Sauce
 
1/3 cup dill pickles, cut into matchsticks
 
1/3 cup mayonnaise
 
1 t pickle juice
 
2 t Hot keens mustard
 
2 T dill, chopped
In a small bowl combine pickles, mayo, pickle juice, mustard and dill. Whisk together and adjust seasoning with salt and pepper.
 
Working in small batches in a skillet over medium-low heat, add oil and fry bologna until lightly golden.
 
Divide the sauce between the buns, add lettuce then bologna, and top with cheese.
