Breakfast Sausage Shakshuka


6 Schneiders Mini Sizzler Breakfast Sausages

1 large onion, thinly sliced

1 large red pepper, quartered, seeded, thinly sliced

3 cloves garlic, thinly sliced

1 teaspoon cumin

1 teaspoon smoked paprika

1/8 teaspoon cayenne pepper, optional

1 28 oz can plum tomatoes including their juices, roughly chopped

½ cup feta cheese 

¼ cup Italian parsley, roughly chopped

6 eggs 

3 Tablespoons olive oil 

¾ teaspoon salt plus extra as needed


Preheat oven to 375 F.

In a large skillet cook sausages per package instructions.  Cut sausages in half and reserve.

Wipe the pan out with a paper towel and heat the olive oil on medium-low heat.  Add the onion and red pepper and cook, stirring frequently, for 15 minutes until soft.

Add the garlic and cook for another minute or two.  Stir in the cumin and paprika and cayenne if using and cook for one more minute.

Pour in the tomatoes and season with salt and pepper.  Simmer for 10 minutes until the tomatoes have thickened.  Check the seasoning and adjust with more salt and pepper as needed.

Nestle the sausages into the sauce then gently crack eggs over the tomatoes.  Season the eggs with salt and pepper.

Transfer the skillet to the oven and bake for 7 to 10 minutes until the eggs are just set.  Sprinkle with feta cheese and parsley.
