Creamy broccoli and ham pasta

1 1/2 cups Schneiders® Applewood Smoked Original Ham, cut into ½ inch pieces

8 oz Dried spaghetti pasta, cook per package instructions, reserve

10 Cremini mushrooms, halved and sliced

2 tbsp (30 mL) Olive oil

3 tbsp (45 mL) Unsalted butter

1 medium Onion, diced

2 Cloves garlic, finely chopped

½ cup (125 mL) Chicken stock

½ cup (125 mL) White wine

1 cup 35% cream

½ cup Italian flat leaf parsley, coarsely chopped

2 cups Baby spinach, tightly packed

2 cups Broccoli florets, lightly steamed for 1 minute, reserved

Zest of one lemon, finely grated

½ cup Grated Parmesan cheese

In a large pot over medium high heat add oil and mushrooms and cook until lightly golden, 3 minutes. Reserve in a small bowl.

Turn the heat down to medium low, add the butter onion and garlic and cook until the onions are soft and translucent, 5 minutes.

Add chicken stock and white wine, bring to a boil and reduce to a ½ cup. Add cream and cook for 1 to 2 minutes. Season with salt and pepper.

Add ham, broccoli, spinach and pasta and warm through.

Finish pasta with freshly grated lemon zest and parmesan cheese.
