Crostini with Hot Calabrese Salametti & Whipped Ricotta

12 slices Schneiders® Hot Calabrese Salametti, thinly sliced and cut in half

12 slices baguette, thinly sliced, and cut in half

1 tablespoon Olive oil

¼ cup olive tapenade

 

For Ricotta:

⅓ cup good quality fresh ricotta cheese

2 teaspoons olive oil

1 teaspoon fresh thyme, finely chopped

2 teaspoons fresh Italian parsley, finely chopped

2 teaspoons fresh basil, finely chopped

¼ teaspoon garlic, finely grated

½ teaspoon kosher salt

Preheat oven to 350 F.

Lay out pieces of baguette onto a baking sheet and brush with olive oil.

Bake for 8 to 10 minutes until golden. Let cool.

In a small bowl, add ricotta and olive oil and whip with a spatula for 30 seconds until smooth.

Add the herbs, garlic, and salt and mix to combine.

 

For Assembly:

Spread about half a teaspoon of tapenade onto a crostini.

Add a slice of calabrese, then top with a dollop of ricotta.

Repeat for remaining crostini.
