Fall Sausage Skillet
3 cups Brussels sprouts, trimmed, halved and blanched for 15 seconds
4 pieces Schneiders® Butcher Cut Double Smoked Bacon, cut into 1 inch pieces
1 medium Onion, sliced
3 cloves Garlic, finely chopped
1 Apple, cored, cut into similar sized pieces as the Brussels sprouts
1 tbsp (15 mL) Olive Oil
2 tbsp Unsalted butter
3 tbsp Italian parsley, coarsely chopped
Zest of 1 lemon finely grated
In a medium sized skillet on medium heat add oil and bacon and cook until lightly golden, reserve on a piece of paper towel.
Clean the skillet, return to low heat and add butter and onions and cook until soft and translucent, about 5 minutes. Add garlic and cook for 1 minute.
Add brussel sprouts, bacon and apple to the onions and garlic. Stir everything together and season with salt and pepper. Place skillet in the oven and roast for 10 minutes.
Give everything a stir, nestle the sausages into the vegetables and roast for another 10 minutes.
Finish with a freshly grated lemon zest and parsley.
