Greek Style BBQ Smoked Sausages

8 Schneiders Savoury Garlic & Honey Sausages 

8 Brioche buns

½ cup English cucumber, seeded, diced

1 plum tomato, core removed, diced

¼ red onion, diced

1 teaspoon oregano, roughly chopped

1 Tablespoon Italian parsley, roughly chopped

1 Tablespoon olive oil

½ teaspoon red wine vinegar 

Salt and pepper

12 kalamata olives, pitted, halved, thinly sliced

¼ cup feta cheese, crumbled

¼ cup tzatziki 

Preheat BBQ to 350 F.

In a small bowl, combine the cucumber, tomato, red onion, oregano, parsley, olive oil, and red wine vinegar. Mix thoroughly, then season with salt and pepper to taste. Reserve.

Grill sausages per package instructions. While the sausages are cooking, toast the buns until lightly golden.

To Assemble: 

Spread both sides of the bun with tzatziki. Place sausage inside the bun and top with a spoonful of cucumber mixture. Sprinkle with feta cheese and black olives.
