Grilled Broccolini Salad

This elegant salad showcases our succulent wieners in an unexpected way. The carefully spiced morsels add crave-worthy texture and flavour to an Asian-inspired fusion dish that tastes even more incredible than it looks.


2 Schneiders Juicy Jumbo wieners, quartered, cut into ¼ inch pieces

1 shallot, thinly sliced

1 clove garlic, finely chopped

1 lb broccolini, ends trimmed, blanched for 30 seconds, shocked in an ice bath, squeezed of excess water

2 Tablespoons sesame oil, divided 

1 Tablespoon vegetable oil

3 Tablespoons fish sauce

1 Tablespoon rice wine vinegar

1 Tablespoon low sodium soy sauce

1 Tablespoon honey 

1 Tablespoon lime juice

¼ cup coriander, roughly chopped

2 Tablespoons crispy onions

2 Tablespoons crispy garlic

1 Tablespoon sesame seeds, toasted

Preheat grill to 400 F

On a large plate, spread out broccolini and drizzle with 1 Tablespoon of sesame oil and season with salt.

Place a skillet on one side of the grill and let heat up for 5 minutes or so.  Add the rest of the sesame oil and vegetable oil to the pan with the wieners and cook until golden brown on all sides, about 2 minutes.  Remove from pan and reserve.  

Add the garlic and shallot to the pan and cook slowly, stirring frequently, until soft. Remove the pan from the grill and add the fish sauce, rice vinegar, soy, honey and lime juice. Whisk together, then finish with coriander.

While the grill is still hot, char the broccolini for a couple of minutes. 

On a large platter, lay out the broccolini, spoon over warm vinaigrette, scatter the wieners on top, and finish with crispy shallots, garlic and sesame seeds.
