Grilled Mango and Avocado Salad

Our naturally smoked sausages are right at home nestled among tender greens. Grilling the sausage and mango accentuates the contrasting yet complementary sweet and smoky flavours. Paired with tangy pickled onions and made-from-scratch vinaigrette, it’s a healthy meal that doesn’t compromise on flavour or indulgence.

2 Schneiders® Classic Recipe Smoked Sausages

1 avocado, peeled and pitted and cut into ½ inch pieces

1 mango (not too ripe), peeled and sliced off the pit

2 cups mixed baby greens

2 tablespoons of coriander, thinly sliced

Pickled red onion

½ red onion, thinly sliced

¼ cup cider vinegar

2 teaspoons sugar

¾ teaspoon salt

½ cup water

Vinaigrette:

3 Tablespoons olive oil

1 tablespoon lime juice

1 teaspoon honey

½ teaspoon rice wine vinegar

¼ teaspoon salt

½ teaspoon Dijon mustard

Preheat grill to 400 F.

In a small bowl, whisk the vinaigrette ingredients together until combined; reserve.

Combine cider vinegar, sugar, salt, and water in a small pot and bring to a boil to dissolve the sugar and salt. 

Place onions in a heat-proof glass jar and top with hot pickling liquid; let cool before using.

Grill mango for 2 to 3 minutes until slightly charred on both sides. Cut into ½-inch pieces once cool.

Grill sausages per package instructions. Slice on a bias.

To Assemble the Salad:

Place avocado, mango, a ¼ cup of pickled onion, coriander, and 2 tablespoons of the vinaigrette in a bowl and toss to coat.

In a separate bowl, dress greens to your preference.

Lay out avocado mixture on a plate, lay sliced sausages over top, and finish with greens.
