Grilled Sausage and Buffalo Mozzarella Sandwich

This recipe is for people who love grilling so much, they’d barbecue each and every meal. Our classic hardwood smoked and seasoned sausages are the savoury heart of this two-hand sandwich, pairing to perfection with creamy mozzarella, peppery arugula, and sweet bruschetta.


1 pkg Schneiders Original Smoked Sausages, butterflied

1 loaf focaccia bread (approx. 450g)

½ cup olive tapenade

200g buffalo mozzarella, sliced

1 cup arugula

½ cup good quality bruschetta

1 Tablespoon olive oil

Preheat grill to 400 F

Split the focaccia and brush both sides with olive oil.

Grill bread until lightly toasted, approx. 2 minutes per side.

Grill sausages per package instructions.

To assemble the sandwich, spread the tapenade evenly on both sides of the grilled focaccia. Lay out the sausages, then add the slices of mozzarella. Scatter on the arugula leaves and finish with the bruschetta. Slice into 4.
