Grilled Sausage and Vegetable Platter with Wild Blueberry Sauce

Roasted and grilled vegetables provide a sublime base of flavours for our signature hardwood-smoked Oktoberfest sausages. A delectable blueberry and vinegar sauce is the balancing, slightly sweet finishing touch. Fine dining at home has never tasted better.

1 pkg Schneiders Oktoberfest sausage

1 cup cooked faro

6 oz butternut squash, cut into ½-inch pieces

½ head of treviso

½ head of white radicchio

½ cup Italian parsley, roughly chopped

1 clove garlic, finely chopped

2 T unsalted butter

2 T olive oil

Kosher salt and pepper

For the Sauce:

¾ cup wild blueberries

⅓ cup sugar

3 T white wine vinegar

2 T water

Preheat grill to 400 F.

Preheat oven to 400F.

Toss the squash in 1T of olive oil and season with salt and pepper.

Roast squash for 20 to 25 minutes until soft.

For the Berry gastrique:

In a small frying pan on medium heat, add the sugar and water and cook until the sugar is amber in colour. Add the vinegar and swirl the pan until the sugar is dissolved, approx. 30 seconds.

Add the blueberries, bring to a boil and remove from the heat. Let the sauce sit for 5 minutes. If the sauce is too thick, add a splash of water.

 

Grill sausages per package instructions.

While the sausages are grilling, toss the treviso and radicchio with remaining 1T of olive oil and season with salt and pepper.

Grill for 2 to 3 minutes until lightly charred and wilted. Allow to cool and roughly chop.

In a medium fry pan on medium heat, add butter and garlic and cook for 30 seconds. Add faro, butternut squash, treviso, and radicchio. Cook for 2 to 3 minutes until everything is warmed through. Finish with parsley and season to taste.

Spoon the faro mixture onto a large platter. Top with grilled sausages and finish with the blueberry gastrique.
