Grilled Spicy Sicilian Sausage with Chimichurri


Grilled Spicy Sicilian Sausage with Chimichurri


5 Schneiders® Naturally Smoked Spicy Sicilian Sausages

1 loaf of Crusty Ciabatta bread, sliced into 5 pieces and then halved

½ cup (125 mL) Extra Virgin Olive oil (plus extra for grilling)

¼ tsp Chili flakes

1 small Garlic clove, finely chopped

1 small Shallot, finely chopped

1 tsp Thyme, finely chopped

¾ cup Flat leaf parsley, coarsely chopped

1 tsp Rosemary, finely chopped

1 tsp Capers, drained, roughly chopped

1 tsp Smoked paprika

3 tsp (15 mL) Red wine vinegar

1 tsp Kosher salt

Preheat grill to 350 F

In a small sauce pot heat olive oil until warm to the touch. Add all other ingredients and let cool to room temperature.

Brush bread with olive oil and grill for a couple minutes on all sides.

Grill sausages for 3-4 minutes on each side.

Place sausages in buns and finish with a generous spoonful of chimichurri.

You could also try splitting the sausage lengthwise making sure to keep the sausage in one piece and grill for another minute before putting in the bun and placing chimichurri on top.

Notes: Chimichurri is very versatile. You can use any fresh herbs you have on hand, you really can’t go wrong. Cold beer is a perfect pairing for this summer dish.
