Ham Steak Eggs Florentine

Make brunch the most satisfying meal of the day with our version of eggs benedict. Meaty ham slices and poached eggs get topped with an easy hollandaise sauce. While you toast the English muffins, get a friend to mix the mimosas.
1 175g Schneiders® Olde Fashioned® Smoked Ham Steak

2 English muffins, split

2 cups Spinach

1 tbsp (15 mL) Olive oil

2 Eggs, poached

3 Egg yolks

1 tbsp (15 mL) Lemon juice

10 tbsp Butter, melted

¼ tsp Cayenne



Heat grill to medium high heat.

Heat olive oil in a large skillet over medium-high heat. Saute spinach for 3-4 minutes or until just wilted. Season with salt and pepper. Set aside and keep warm.

Place egg yolks into a blender with lemon juice. Blend on high for about 20 seconds. Reduce blender speed to medium and slowly drizzle butter into mixture. Blend for about 1 minute. Pour hollandaise into a measuring cup.

Fill a large bowl with hot water and set measuring cup into the water bath be careful not to get any water into the hollandaise. Toast English muffins and lightly butter.

Grill ham steak for 3 to 4 minutes per side or until an internal temperature of 165ºF (75ºC). Slice ham steak in half.

Assemble Florentine by topping each English muffin with spinach followed by ham and poached egg. Drizzle hollandaise over top.

Sprinkle with cayenne.
