Italian Parmesan Smokies with Grilled Vegetable Relish

We created this Italian-inspired relish recipe to match the smoke, seasonings, and zesty cheese inside our succulent parmesan smokies. Because with authentically spiced and carefully crafted sausages this delicious, you owe it to yourself to up your condiment game.

8 Schneiders Italian Parmesan Smokies

8 Brioche Buns

½ large red pepper, halved, seeds removed 

½ green zucchini, split lengthwise in half, seeds removed 

½ red onion, cut into 4 wedges keeping the core to hold the onion together.

2 Tablespoons olive oil

2 Tablespoons Italian parsley

1 teaspoon red wine vinegar

1 teaspoon pickled mustard seed

Salt and pepper

¼ cup good quality aioli

Preheat grill to 400 F.

In small bowl, mix the red pepper, zucchini, and red onion with 1 tablespoon of olive oil and a pinch of salt and pepper.  

Grill the vegetables for 3 minutes per side. 

Grill the sausages per package instructions. While the sausages are cooking, lightly toast the buns.

Thinly slice the vegetables, and add them to a small bowl. Stir in the parsley, remaining 1 Tablespoon of olive oil, red wine vinegar, and mustard seed. Season the mixture with salt and pepper to taste.

To Assemble:

Place a sausage in a bun. Add a spoonful of the vegetable relish and top with a drizzle of aioli.
