Italian-Style Spicy Sausage, Kale and White Bean Soup
This soup brings together robust Italian flavours into one hearty bowl. Chunks of our spicy sausages pair with savoury beans and kale, adding richness to the flavourful broth. A sprinkling of shaved parmesan adds the final decadent touch for a comforting and indulgent meal.
2 Schneiders® Spicy Sicilian Smoked Sausages, diced
2 tablespoons olive oil, plus extra for garnish
1 cup onion, diced
1 cup fennel, diced
3 cloves garlic, roughly chopped
2 19 oz cans of Italian beans (e.g. Cannellini or Romano), drained
1½ L low sodium chicken stock
1 bunch Tuscan kale, tough ribs removed, roughly chopped (approx. 4 cups)
¼ cup Parmesan cheese, coarsely grated
¼ cup fried bread crumbs (optional)
Juice of ½ a lemon
Salt and pepper
In a large, heavy-bottomed pot over medium heat, add olive oil and sausage and cook for 1 to 2 minutes until sausages start to brown.
Add onion and fennel and cook, stirring frequently, until vegetables are translucent. Stir in garlic and cook until fragrant; 30 seconds.
Add beans and chicken stock and bring to a boil. Reduce heat to a simmer and cook for 15 to 20 minutes. Adjust seasoning with salt and pepper.
Just before serving, fold the kale into the soup and allow to cook for 2 to 3 minutes until wilted.
Finish soup with a squeeze of fresh lemon juice.
Garnish soup with Parmesan cheese, fried bread crumbs(optional), and a drizzle of olive oil.
Tips:
For a creamier consistency, before adding the kale, blend 1½ cups of the soup with an immersion blender.
Serving Suggestion:
Serve with a leafy green salad and good, crusty bread.
