Juicy Jumbo Corn Succotash
4 Ears corn, shucked
1 Avocado, diced
½ cup PC Pico de Gallo Mild Salsa
½ cup Cilantro, chopped
½ cup PC Feta Cheese in Brine, crumbled
1 Jalapeño, seeded and thinly sliced
Preheat the barbecue to medium-high heat.
Place the corn on the grill, rotating often, until charred on all sides, about 6 minutes.
Place Juicy Jumbos® on grill until dark brown on all sides and heated through, about 6 minutes, rotating often. Remove from grill and tent with aluminum foil to keep warm.
Cut corn from cob. Mix with avocado, pico de gallo and cilantro.
Transfer corn mixture to a serving platter, top with Juicy Jumbos®. Garnish with feta and sliced jalapeños.
