Maple Bacon Bourbon Glazed Coffee Cake

Coffee cake has never had it so good! Indulge in sweet, buttery cake topped with a scrumptious bacon pecan crumble.

Coffee Cake Batter

½ cup unsalted butter, room temperature, plus more for greasing the pan

1¼ cups white sugar

2 eggs

1½ cups all-purpose flour

1½ tsp baking powder

½ tsp baking soda

½ tsp kosher salt

1¼ cups sour cream

1 tsp vanilla

Pecan Crumb

1½ cups pecans, lightly toasted

⅓ cup white sugar

⅓ cup brown sugar

1 tsp cinnamon

⅛ tsp kosher salt

3 Tbsp unsalted butter, melted

3 slices Schneiders® Butchers Cut Country Maple Bacon, cooked until lightly golden (not crispy), finely chopped

Icing 

1 cup icing sugar

2 Tbsp bourbon

2 tsp 35% cream, plus more if needed

½ cup pecans, finely chopped

3 slices Schneiders® Butchers Cut Country Maple Bacon, cooked until lightly golden (not crispy), finely sliced

2 tsp maple syrup

Preheat oven to 350F. Grease a 9” by 9” baking pan. 

For Coffee Cake

In the bowl of a stand mixer + paddle attachment, beat butter and sugar until light and fluffy (approx. 5 minutes).  

In a medium bowl whisk together flour, baking powder, baking soda and salt. 

On low speed, add eggs one at a time until incorporated.

On low-speed, alternate adding half the dry ingredients, then half the sour cream. Repeat until everything is incorporated, do not over mix. Stir in vanilla.

For Pecan Crumb

In a food processor, pulse pecans until finely chopped. Transfer to a medium bowl, add white and brown sugar, cinnamon, salt, melted butter and bacon and mix until all is coated in butter.

Spoon half the batter into the prepared baking tin.  Sprinkle half the crumb onto the batter then add remaining batter on top. Sprinkle remaining crumb on top.

Bake for 40-50 mins until a toothpick comes out clean when inserted into centre of the cake.

While cake is baking, combine all the ingredients for the glaze. Mix until combined, add more cream if glaze is too thick, or more icing sugar if too runny.

Once cake has cooled for 20 mins, spread glaze evenly over the cake.

Let cool completely before cutting.

Tips: 

Try using different nuts such as almonds or walnuts in the crumb.  Also, try ½ teaspoon each of cinnamon and nutmeg to the cake batter for a little more punch.
