Maple Bacon Caramel Corn

Bacon is here to make movie and game night snacks better by joining delicious forces with buttery sweet caramel corn.

6 slices Schneiders® Butchers Cut Double Smoked Bacon, cooked until golden (not crispy), roughly chopped

2 bags popcorn popped or 1/2 cup popping kernels

½ cup unsalted butter

1 cup brown sugar

¼ cup light corn syrup

½ tsp vanilla

½ tsp baking soda

½ tsp kosher salt

1 Tbsp bacon fat

Preheat oven to 250 F

Line a baking sheet with parchment and spray with vegetable cooking spray. Dump popcorn onto the baking sheet removing any unpopped kernels.

Spray 2 rubber spatulas with cooking spray. Reserve.

Combine butter, bacon fat, brown sugar and corn syrup in a medium sized pot on high heat.

Stirring constantly, bring to a boil and continue to cook for 4 mins.

Remove pot from the heat, stir in vanilla and baking soda. Be careful as the mixture will bubble. Quickly stir in the bacon and pour over the popcorn.

Mix with spatulas until the popcorn is evenly coated in caramel, be careful as the caramel will be very hot.

Place popcorn in the oven and bake for 35-40 mins, mixing every 15 mins.

Can be stored in an airtight container for up to 3 days.

For a twist on classic caramel corn, add a ½ cup of roughly chopped peanuts to the caramel before dumping over popcorn. Also try a ¼ teaspoon of cayenne pepper for a little kick.
