Mexican Avocado Corn Salsa Smokies
5 sesame seed buns
1 cob of corn, charred and kernels removed
½ avocado, cut into ¼ inch dice
1 scallion, thinly sliced
1 tbsp coriander, finely chopped
1 tsp (5 mL) olive oil
1 tsp (5 mL) lime juice
Salt
3 tbsp mayonnaise
1 tsp (5 mL) lime juice
1 tsp sriracha
¼ cup crumbled queso fresco cheese or feta
Combine corn, avocado, scallions, coriander, olive oil and lime juice. Mix well, season to taste and reserve.
Whisk together mayo, lime juice and sriracha.
Reserve.
Grill Schneiders® Smokies per package instructions.
Divide salsa between buns. Add Schneiders® Smokies, drizzle with sriracha mayo and top crumbled cheese.
