Roasted Chicken with Bacon, Lentils & Yogurt Sauce

Dress your chicken to impress with our bold, smoky bacon and an exciting medley of flavours, including a colourful and tangy Greek yogurt sauce. This mouth-watering recipe elevates a simple chicken dinner into something special.


2 boneless skinless RWA Prime chicken breasts, marinated with your favourite chicken seasoning

6 slices Schneiders® Butchers Cut Double Smoked Bacon, cooked until crisp, reserved

1 tablespoon vegetable oil

¾ cup beluga lentils, cooked per package instructions

3 tablespoons olive oil

1 tablespoon sherry vinegar

1 teaspoon salt

1 teaspoon pepper

1 cup cherry tomatoes, halved

1 avocado, cut into 1 inch pieces

1 cup arugula, roughly chopped

¼ cup basil roughly chopped

2 tablespoons toasted sunflower seeds

Yogurt sauce:

1 cup Greek yogurt

1 clove garlic, finely grated

1 tablespoon olive oil

2 teaspoons lemon juice

½ teaspoon turmeric

Salt and pepper to taste

Preheat oven to 400 F.

In a medium skillet on medium heat, add vegetable oil and chicken breasts. Sear chicken on one side until golden, then flip and transfer pan to the oven. Cook chicken until done (internal temperature of 165F or 74C). 

While chicken is cooking, mix all the ingredients for the yogurt sauce in a small bowl. Adjust seasoning and reserve.

In a medium bowl, add lentils, olive oil, sherry vinegar, and season with salt and pepper.

Mix tomatoes, avocado, arugula, and basil.

To assemble:

Spoon yogurt sauce onto a platter. 

Scatter the tomato & avocado mixture over yogurt, then spoon lentils on top. 

Top with sliced chicken, bacon, and sunflower seeds.
