Sausage Fresh Rolls

Through the rice paper wrap, you can clearly see our sweet & savoury sausage and a bounty of fresh, crisp vegetables waiting inside. Paired with a homemade Asian-inspired dipping sauce, it’s an irresistibly delicious lunch, snack or entertaining hors d’oeuvre.

3 Schneiders® Savoury Garlic & Honey Smoked Sausages

6 small rice paper wrappers

½ English cucumber, julienned

1 carrot, cut in half, julienned

1 yellow pepper, seeded, julienned

4 romaine hearts, halved, finely sliced

¼ cup coriander leaves, picked

¼ cup mint leaves, picked

Dipping Sauce:

1 shallot, thinly sliced

1 Tablespoon lemon grass, thinly sliced

2 lime leaves, thinly sliced

1 Tablespoons of ginger, finely grated

1/3 cup lime juice

2 Tablespoons vegetable oil

1 teaspoon chili oil

3 Tablespoons orange juice

2 Tablespoons sugar

2 Tablespoons fish sauce

Preheat grill to 350 F

Combine all the ingredients for the dipping sauce in a small bowl. Let sit for 10 to 15 minutes then strain through a fine strainer.

Grill sausages per package instructions, let cool and thinly slice on a bias; reserve.

To assemble the rolls:

Run a piece of rice paper under warm water for a second or two. Place the paper on a damp linen napkin.

Moving quickly, place 3 or 4 pieces of sausage across the middle of the rice paper.

Then lay your vegetables on top. Start with cucumber, then carrot, peppers, lettuce, and finally top with fresh herbs.

From the bottom, roll as tightly as possible and reserve in a baking dish with a damp paper towel over top until all the rolls have been wrapped and you are ready to serve.

Serve rolls with dipping sauce.

Tips:

Use a Japanese mandoline with the medium teeth for a fast, easy way to cut the vegetables.
