Sausage Pancake Stackers

1 375gr package Schneiders Original Recipe Breakfast Round Sausages

1 cup (250 mL) flour, sifted

¼ cup (60 mL) sugar

1 ½ tsp (7 mL) baking powder

½ tsp (2 mL) salt

¾ cup (180 mL) milk

1 ½ tsp (7 mL) vanilla extract

2 tbsp (30 mL) butter

Cooking spray

Maple Syrup

Mixed berries and sliced bananas

Cook sausage per package directions, set aside and keep warm.

Combine flour, sugar, baking powder and salt in a large bowl.

Add milk and vanilla to bowl. Using a whisk, mix until just combined.

Heat 2 tbsp of butter in a large skillet over medium heat.

Pour about 2 heaping tbsp of batter onto skillet leaving about ½ inch between pancakes.

Wait for about 1 to 2 minutes until small bubbles appear on top of each pancake.

Flip pancakes and allow to cook 1 to 2 minutes longer or until golden brown.

Remove from skillet onto a paper towel lined plate. Spray pan with oil if needed and continue to make pancakes with remaining batter.

Assemble stacks by layering a pancake followed by sausage, pancake, sausage and topped with remaining pancake. Pour syrup over top and garnish with fresh berries and banana.

Notes:
Batter recipe will yield 10 to 14 silver dollar pancakes.
