Sheet Pan Sausages


1 pkg Schneiders® Sharp Cheddar Smokies, cut into 1 inch pieces

2 cups Broccoli florets

2 cups Cauliflower florets

2 cups Sweet potato, cut into 1 inch pieces

1 cup Red onion, cut into 1 inch pieces

3 cloves Garlic, finely chopped

1 tsp Rosemary, finely chopped

1 tbsp Italian seasoning

2 tbsp (30 mL) Olive oil

3 tbsp Italian parsley, roughly chopped

Salt and pepper to taste

Preheat oven to 400ºF.

Add broccoli, cauliflower, sweet potato, onions, rosemary and garlic in a bowl. Drizzle over oil, season with salt and pepper and toss so everything is coated with oil.

Place vegetables on a parchment lined baking sheet and top with sausages.

Bake for 20 minutes, stirring half way through.

Finish with freshly chopped parsley.

Serve on top of rice or quinoa.
