Sliced Ham Nicoise Salad
300g Schneiders Applewood Sliced Smoked Ham
3 eggs, soft boiled, quartered, seasoned with salt and pepper
½ lb French green beans, topped and tailed, blanched
10 fingerling potatoes, cooked, cooled, halved lengthwise
6 breakfast radishes, trimmed, each cut into 6 wedges
1 cup cherry or grape tomatoes, halved
1 head Romaine lettuce, core removed, halved lengthwise and cut into 1” pieces
1 cup arugula
1/3 cup pitted olives, halved
2 Tablespoons chives, thinly sliced
2 Tablespoons tarragon, roughly chopped
2 Tablespoons Italian parsley, roughly chopped
For Vinaigrette
1 shallot, thinly sliced
1 teaspoon Dijon mustard
3 Tablespoons Champagne vinegar
9 Tablespoons good quality olive oil
Kosher salt and pepper
To make the vinaigrette combine the shallot and Champagne vinegar and let for 10 minutes or so.
Add the Dijon mustard and olive oil and whisk to combine. Season with salt and pepper to taste and set aside.
On a large platter artfully arrange the slices of ham.
In one medium bowl combine the romaine lettuce and arugula. Add half the fresh herbs and half the vinaigrette. Mix so the lettuce is evenly dressed then scatter on top of the ham.
In another medium bowl combine the potatoes, green beans, cherry tomatoes and radishes. Add the remaining herbs and vinaigrette and toss to evenly coat everything in dressing. Season with salt and pepper to taste then arrange on top of lettuce.
Finish by scattering the soft boiled egg onto the salad.
Serve Immediately.
