Smoked Sausage and Vegetable Packets

1 pkg Schneiders® Italian Parmesan Smoked Sausages, each sausage cut into 5 slices

1 large Red pepper, seeded and cut into 16 pieces

8 mini Red potatoes, halved, or quartered depending on size

8 mini Yukon gold potatoes, quartered

2 cloves Garlic, chopped

8 mini Corn cobs, halved

½ cup Red onion, diced

1 tsp Rosemary, roughly chopped

1 tbsp Thyme, finely chopped

2 tbsp (30 mL) Olive oil

½ tsp Smoked paprika

1 tsp Salt

Fresh pepper

2 tbsp Italian parsley, roughly chopped

4 feet of heavy duty 24” tin foil

Preheat grill or oven to 400 ºF.

In a large bowl mix all the ingredients together except for the parsley.

Lay out two 2ft pieces of tin foil on your work surface.

Divide your mix in half and place in the middle of each piece of tin foil.

Carefully bring the longer edges of foil together and fold over to seal.

Fold each end in on itself 2 or 3 times so that the whole packet is sealed tight.

If grilling place on indirect heat and cook for approximately 25 to 30 minutes until the potatoes are soft. If using your oven, bake on a baking sheet on the middle rack of the oven.

Once cooked open packets, sprinkle with parsley and adjust seasoning as desired.

Notes:
Be very careful opening the cooked packets as there will be a lot steam inside. An arugula salad would be a great accompaniment to this sausage and vegetable dish.
