Spicy Bologna Avocado Sandwich


12 slices Schneiders® Blue Ribbon® Classic Bologna

4 Fresh kaiser buns

8 slices Smoked Gouda cheese

8 leaves Bibb lettuce

2 Avocados

2 tsp Mayonnaise

1 tsp (5 mL) Lime juice


½ cup Crispy onions

Sriracha to taste

Canola oil

Preheat non-stick pan over medium heat. Add a splash of canola oil and fry Schneiders® Blue Ribbon® bologna slices until golden, approximately 1 minute a side. Reserve.

Smash avocado with a folk, add mayo, lime juice and salt and mix until incorporated. This mixture will not be smooth.

Halve the buns and start assembling. Start with a layer of avocado, then Schneiders® Blue Ribbon® bologna, a piece of lettuce, cheese. Add another layer in that order, top with the last piece of bologna and sprinkle with crispy onions. Drizzle with sriracha to taste.
