Spicy Sausage Pasta
1 cup Red onion, thinly sliced
1 cup Fennel, thinly sliced
2 cloves Garlic, thinly sliced
2 cups Dried short pasta, cooked
1 cup Corn kernals
1 cup Cherry tomatoes, halved
1 cup Zucchini, halved, thinly sliced
½ cup Italian parsley, coarsely chopped
4 tbsp (60 mL) Olive oil
½ cup (125 mL) Dry white wine
2 tbsp (30 mL) Lemon juice
Salt and pepper
Cook Schneiders® sausages in the oven to package instructions. Slice into ¼” rounds.
In a large pot on medium heat add 2 tablespoons (30 mL) of oil, onion, garlic and fennel and cook until soft but no colour.
Add white wine and reduce by half.
Stir in sausages, tomatoes, zucchini, corn and pasta. Cook for 1 minute. Season with salt and pepper.
To finish the pasta add lemon juice, 2 tablespoons (30 mL) of olive oil and parsley.
Notes:
Try crumbling feta or goat cheese over top for added richness. Serve with fresh crusty bread.
