Truffle & Miso Glazed Ham

When you start with one of our delicately cured and patiently smoked hams, only the best glaze will do. This simple yet exceptional recipe delivers rich umami flavour from indulgent white truffle oil, with nutty and tangy notes. Brown sugar adds just the right amount sweetness for balance, creating an exceptional ham worthy of being the centrepiece on your table.


1 Schneiders® Carved Off The Bone Ham

½ cup brown sugar

½ cup sake

2 shallots, diced

½ cup lite soy sauce

½ cup chicken stock

2 tablespoons miso paste

1 tablespoon sesame oil

½ cup cold, unsalted butter

2 tablespoons white truffle oil

Preheat oven to 325 F.

In a small pot add brown sugar, sake, and shallots and bring to a boil. Reduce heat to a simmer and cook for 2 to 3 minutes until slightly thickened.

Add the soy sauce, chicken stock, miso paste, and sesame oil, whisk together and cook for another minute.

Let cool slightly then transfer to a blender and slowly blend in butter and truffle oil.

Brush glaze all over ham.

Bake for 40 minutes covered with foil with a little bit of water in the bottom of the pan.

Turn up the oven to 400 F. Remove the foil, re-baste, and bake for another 15 to 20 minutes until the ham is golden brown.
