Ultimate Bacon Sandwich

1 pkg Schneiders® Butchers Cut Double Smoked Bacon, cooked to package specifications

3 good quality Brioche buns, halved

1 medium Red onion, thinly sliced

2 tbsp (30 mL) Balsamic vinegar

1 tbsp + 2 tbsp of Melted unsalted butter

1 medium sized Heirloom tomato, halved, core removed, thinly sliced

3 tbsp Good quality pesto

150 g Buffalo mozzarella, thinly sliced

In a medium skillet on low heat, add 1 tablespoon of butter and all the onions. Cook stirring often for 5 minutes. Add salt and pepper and continue to cook until lightly golden. Add balsamic vinegar and stir to incorporate.

Brush the cut side of the buns with butter and toast until golden in a dry skillet on medium heat, reserve.

Spread both the top and bottom of the bun with pesto. Layer the onions, then cheese, tomato top with bacon. Repeating to make the remaining sandwiches.

Notes:
You can make the onions ahead of time. Store them in an airtight container until needed.
