Bacon seems so simple. But we put a lot of craft experience behind simple. The right balance of cane sugar and a little salt in the brine. A special mix of North American hardwood for smoking, including intense hickory and sweet applewood. Hanging it gently by hand, so it smokes evenly. Good thing we’ve been practicing for decades.
