Cheddar Sausage and Pesto Gnocchi

Cheddar smoked sausages, veggies, white beans, and gnocchi roast to perfection all on the same sheet pan in this delicious meal. Toss with a little pesto for an elevated dinner any day of the week.

Ingredients

3 Schneiders® Classic Cheddar Smoked Sausages, diagonally sliced

1 pkg (500 g) potato gnocchi

1 red pepper, chopped

1 small zucchini, chopped

½ red onion, chopped

2 tbsp extra-virgin olive oil

1 cup drained and rinsed canned white beans

½ cup basil pesto

¼ cup grated Parmesan cheese

½ tbsp red pepper flakes (optional)

¼ cup torn fresh basil

Directions

Preheat oven to 425°F. Line a large sheet pan with parchment paper.

Spread gnocchi, sausage, vegetables on sheet pan; drizzle with oil, tossing to coat.

Bake for 20 minutes or until light golden, tossing halfway through. Add beans, drizzle with pesto and toss to coat. Bake until warmed throughout, about 5 minutes.

Divide mixture into bowls and top with parmesan cheese, crushed red pepper flakes and basil.
