This is a traditional central European salami. We mix a classic blend of black and white pepper, sugar, garlic, and rosemary into the coarsely ground pork. Once stuffed into a casing and hung by hang, it cures for many weeks to round out its flavour and give it a mildly spicy tang. Try a slice on its own to appreciate the subtle flavour.
