Salsa Salami

We give this old-world salami a new-world twist. We start with ground pork, stuffed into casing and hung by hand, which then ferments over weeks. Once it’s finished dry curing, we roll it by hand in a spicy salsa. And while it rests, the flavours blend together, leaving it with a complex tang and kick.
