This is a classic Black Forest sausage. Because it’s semi-dry, once cooked, it’s very versatile, so you can serve it on its own, as part of a charcuterie platter, or sliced in a sandwich. It has a very distinctive tanginess, which comes from the fermentation step in its preparation.
