Honey Maple Smoked Ham
This ham is distinctive for the honey and maple syrup that gets added to the cure, resulting in a complex sweetness, in balance with the traditional salt cure. It’s made from select cuts from the hindquarter, which brings just the right ratio of meatiness and juiciness. Spending about seven hours in the Schneiders® smokehouse, with North American hardwood, it’s an intensely flavourful ham.
