Traditional kolbassa (or kielbasa), like we make it, has two very distinctive characteristics. It has a mix of bigger chunks of pork alongside a finer grind, giving it a meaty and juicy mouthfeel. And it’s strongly spiced, with lots of garlic, pepper and mace. You can see these characteristics in every piece, making it equally a feast for the eyes.
